On April 16, 2025, the North America's 50 Best Bars organization released the first list of bars ranked from 51st to 100th. These new rankings are based on votes from over 300 Voting Academy members, including cocktail experts, bartenders and beverage journalists. The list celebrates the emerging cocktail culture in North America and includes a total of 29 bars from the USA, 15 from Canada and 5 from Mexico.

The USA is well represented with bars from metropolises such as New York, Los Angeles and Chicago. Of particular note is the Library Bar in Toronto, which ranks 51st. Bars like Nickel City in Austin, Happy Accidents in Albuquerque and Bandista in Houston are also on the list. In Canada, Calgary’s Missy’s and Montreal’s Bar Bisou Bisou also occupy significant spots. Mexico has also gained a foothold with established eateries like Sabina Sabe and Brujas.

Setting trends in cocktail culture

The release of the list comes at a time when the spirits and cocktails market is already changing. The annual “Cocktail Trends Report” from Bacardi, in collaboration with The Future Laboratory, identifies five relevant trends for 2025. The key message of this report is that drinks are increasingly associated with premium demands.

A key trend is consumers' openness to exclusive entertainment experiences centered around cocktails and spirits. Bartenders develop into influential designers and opinion leaders who create meaningful experiences. Consumers are also looking for more intense, multi-sensory experiences that go beyond traditional cocktail options.

Exciting developments in beverage culture

Cocktail culture is increasingly influenced by culinary creativity, evidenced by a growing interest in savory and herbal flavors. These changes are in line with the broader call for inclusive and community-focused approaches in the industry to foster meaningful connections between people.

While the 51-100 list highlights the foundational components of cocktail culture, the 1-50 list will be launched on April 29 in Vancouver and streamed live on YouTube via the 50 Best Bars TV channel. This not only celebrates the evolution of bars, but also underscores the sustainable growth and adaptability of cocktail culture in North America.

The list and the accompanying report provide strong inspiration for the future direction of the beverage world.
