There is exciting news in Pongau for all lovers of regional specialties. Shortly before the opening of the “Competence Center for Alpine Wild Culinary” a project was launched that not only aims to enrich the culinary landscape, but also relies on close cooperation between hunters, gastronomy and tourism. The ambitious initiative is supported by the European Union and the state of Salzburg with a total budget of around 100,000 euros.
The center, which is based in Schwarzach, will be an important contact point for the marketing and processing of game meat from the region. The focus here is on the aspects of production, processing and the subsequent sale of venison. “We want to highlight the benefits and quality of game meat, both for local people and tourists,” explains a spokesperson for the project.
Creating awareness of regional products
The collaboration between the hunters and the catering industry is already in full swing. Cooking classes are offered in which participants learn how to prepare dishes from deer, roe deer or wild boar meat. Such offers are intended to increase the appreciation for regional products and show how valuable local food can be. During a visit to the Salzburg Schranne, Deputy State Governor Marlene Svazek and State Councilor Josef Schwaiger were able to test the high quality of the products. “The hunters of Pongau not only make a contribution to maintaining the ecological balance, but also show great commitment to refining their products,” said Svazek in praise.
Schwaiger also emphasized the importance of such initiatives: "It is crucial for the population and tourism that we promote high-quality, local food. Venison is the ideal solution here that combines health, regionality and quality."
The EU and the state of Salzburg are investing in the future
The project is receiving significant funding from the EU through the LEADER program, which is providing around 80,000 euros. The remaining budget comes from the state of Salzburg. The aim of this initiative is to increase the demand for sustainably produced food and to integrate it into gastronomy and tourism. The prospect of more local produce and game offerings could have a positive impact on the entire region by strengthening the link between agriculture and gastronomy.
