In the heart of Kötschach-Mauthen, an exciting event is on the program that deals with a fascinating topic: "The taste of wood". On November 13, the event of the 1st Slow Food Academy of the Alps will take place in the ballroom of the "Zur Sägen" factory canteen. Under the direction of Artur Cisar-Erlach, an expert in food and forest ecology, the audience is introduced to the culinary secrets of the taste of trees.
Cisar-Erlach will explain the history of the “Baum Essen” and show what role it could play in the future of the global food system. It is particularly emphasized how the natural aromas of wood can enrich foods. This is done not only through tastings that the participants take with them on a taste of the taste, but also through valuable information about the production and refinement of food with wood taste.

The lecture also offers practical tips on how wooden taste is also used in the kitchen. Using descriptive examples and tastings, it is demonstrated which versatility can develop the wood notes in the catering trade.
Another speaker, Valentin Latschen from Klagenfurt, will also share his knowledge. As a pioneer in fruit processing, he brings regional fruits in wooden barrels to maturation and shows how the flavors are intensified during this process. The participants will surely inspire its techniques for the production of noble fires.
Healthy food from nature
An interesting aspect is the use of tree juicers, which the forest pedagogue Klara Obernosterer refers to as "blood of the trees". These juices are not only delicious, but also health -promoting. Obernosterer explains how the juices can be used for special foods. Tree needles are also discussed, the hydrolate of which can be used as aroma substances in the kitchen.
In the final round with Edelgreissler Herwig Ertl, balsamic vinegar mature over a period of more than twelve years in seven different wooden types. This vinegar is extremely popular in the gourmet kitchen and give dishes a special note and depth.
