In the Salzburg Asia-Restaurant Fuji under the direction of Timo Zhou, a new and at the same time unusual concept is introduced to combat food waste. Guests can eat as much as they want at a fixed price, but there is an important rule: If you don't eat all the dishes, you have to pay a fee of five euros from the third plate.
Timo Zhou was inspired by his father's experiences, who previously operated an all-you-can-eat buffet. "I calculated that we disposed of more than one ton of food per year," reports Zhou. With this new measure he would like to set an example and encourage guests to deal with food more responsibly.
