The conversion of an old must cellar into a modern cultivation location enabled him to breed fresh oyster mushrooms, which are now also offered in his farm shop and at the farmers' market in the area.

"I have been interested in microbiological processes for a long time," explains Sebastian, who works in the Wieselburg brewery while he talks about his inspiration for fungus production. After a seminar in Vienna on mushroom cultivation, the fascination for the topic has no longer released him. His focus is currently on the breeding of oyster mushrooms that bribe through their unique taste.

The nutrition of the oyster mushrooms also makes it a healthy choice for many dishes. They are low in calories, fat -free and offer a good source of fiber. "The fiber ensure that you stay full for a long time, and they are even suitable as a meat replacement," added Sebastian. On his Instagram channel, he shares numerous recipes that range from mushroom-sliced to vegetarian kebap. The farmers' market in Ferschnitz, which takes place on the third Saturday of the month, offers a variety of regional products. On October 19, 15 providers will present their goods for the last time this year. Sebastian is already planning to offer more varied ranges next season. "Due to many demands, there will also be new tomatoes from its own cultivation," he says optimistically.

In addition to the oyster mushrooms and the mushroom pesto, the farmers' market is also a place where local producers can show their craftsmanship. "It is a wonderful opportunity to strengthen the community and offer regional products a platform," said Sebastian.
