In the Swiss -Anchored municipality of Schwarzach in the Pongau, an important project to promote wild meat has started. Here in the competence center and the gourmet greisserei, you work intensively with hunters and guest businesses from the region to advertise the advantages of venison. The focus is on the awareness of the population, tourism, gastronomy and agriculture for these regional delicacies. The project was launched with a total funding of around 100,000 euros, with around 20,000 euros being made available by the state of Salzburg.

Schwarzach acts as a central point of contact for everything that has to do with production, refinement and the sale of wild boards. The activities also include the implementation of cooking courses, in which interested parties learn how to deal with meat from wild animals such as deer, deer, deer or wild boar.

The project is also supported by an EU funding within the framework of LEADER, which includes around 80,000 euros. Schwaiger states: "The Salzburgers appreciate high -quality, domestic and healthy foods. Wildbret combines exactly these three points." The committed work of the hunters and regional gastronomy brings significant advantages to the entire region.

The concept shows how to increase the quality of the wild bridge through the close cooperation between hunting and gastronomy, but also promote appreciation for local products.
