District Administrator Dietmar Seefeldt recently visited the wild butcher shop in Billigheim-Ingenheim to draw attention to the importance of wild meat in the Südliche Weinstrasse district. "Wild meat is the most organic meat and a regional food," emphasized Seefeldt. But that's not all! Numerous driven hunts take place in autumn, in which hunters regulate the game population in our forests. African swine fever (ASP) in particular makes it necessary to reduce wild boar population in order to combat animal disease.

Where is there? In addition to the direct sale by the hunters and at the weekly market in Landau, there is now also a vending machine in front of Hauptstraße 25 in Ingenheim. Here the trained chef Florian Kunz has transformed the former butcher shop into an EU-certified wild butcher shop, which only processes wild meat. "The hunters already deliver high quality with us, which also speaks for the high level of expertise in the regional hunters," said Kunz. Products such as wild ham, roast pieces and canned sausage are offered in the wild butcher shop- all under the highest quality and hygiene standards.

The demand for wild products increases

The refinement of wild meat is essential today. District hunting master Jörg Sigmund, who has been a hunter for 40 years, remembers times when game was still sold in the ceiling. Today, however, wild products are offered ready for the kitchen. There are two certified wild butchers in the district: the Kieffer butcher in Bad Bergzabern and the game finishing Florian Kunz. "We offer services for hunters who can hand over to us and we will process it for you," says Kunz.

In the district of southern Weinstraße, around 2,000 wild boars, 2000 deer and about 150 red deer are killed per hunting year. "There can be 15 to 20 wild boars with driven hunts," says Fritz Rück, chairman for wildlybreaking. The guaranteed acceptance of the game is crucial, as back with his wild trade bought the non -marketed game and processes 90 different products. "Wild is no longer a niche product," says Rück, who plans to hand over his sales booth to Florian Kunz, which will operate the wild trade in addition to the butcher.
