In Germany, hummus is enjoying growing popularity, and a small start-up in Geretsried has been committed to making this delicious paste from chickpeas in a Bavarian way known. "Legomo", founded by Natallia Spengler in 2021, aims to promote organic cultivation in the region and enrich the native cuisine with new, creative products.

The development of the company began on a small scale and was shaped by manual work. Today, modern machines are already being used to produce the various hummus variants- including nature, paprika and grilled vegetable taste. Falafelteig, "Pulled Chick Peas" and various sauces are also part of the range that is created in the immediate vicinity of nature and local farmers.

The way to the food industry was not always easy for Spengler. High hygiene requirements and strict regulations caused delays in product development. It was also a challenge to find suitable buyers for their products. In the meantime, however, Legomo has successfully established itself and supplies around 25 grocery stores, including organic shops and branches from Edeka and Rewe. The company also offers its products through an online shop. With sales figures of up to 5000 hummus packs per month, the team has made remarkable progress, but emphasizes that the focus is not on the sales figures, but on a solid concept.

A central element of Legomo is the organic seal that ensures the quality of the products. The chickpeas come from a farmer from Landsberg am Lech, and Spengler makes sure to use "not perfect" ingredients that are often sorted out. This corresponds to your goal of counteracting the throw -away company and promoting sustainability in food production.

"We are proud of our Bavarian organic seal," says Spengler, who made sure that all ingredients from organic cultivation come in Bavaria. The production takes place with the minimal addition of additives, while the "HPP process" ensures that the products remain fresh for a long time. This means that hummus is under extreme pressure, which means that it can be preserved without chemicals.

The founder started her trip in the food industry as a career changer after taking her law studies in Germany in 2021. Originally from Belarus, Spengler found the work in her hometown Geretsried to be extremely satisfactory. Family and work can be connected here, which benefits their joy in work.

LEGOMO, which means "vegetables" in Esperanto, not only produces hummus and falafel, but also innovative desserts like a chocolate mousse, which is enriched with ingredients such as agave gops, cocoa and almonds. These creative approaches not only make the products stand out in terms of taste, but also position the company as a pioneer for new enjoyment opportunities.

The vision of Natallia Spengler goes beyond the current success. In the near future, the entrepreneur plans to further expand the company. A change of location could be due, but it is essential to continue working with local farmers. Perhaps chickpeas will soon become an even more frequent sight in the Free State.
