So Spath explains that a fresh chicken broth is a proven home remedy for colds. "Freshness is the key," said Spath, while giving a customer a soup chicken.

The demand for fresh soup chickens has increased in recent years, not least because of stricter regulations that many providers have put off. Even pharmacists now buy from Elsäßer, which shows how popular his goods are now. "You can tell that people are more important to fresh, regional products," says Elsäßer. The location is also a reason why many people from the surrounding cities like Heuberg, Rottweil and Trossingen visit the market.
