Farrach Castle: Culinary excellence has lasted for 25 years
in Farrach Castle has been gastronomically spoiled at the highest level for over 25 years. The restaurant also convinced in the current "Gault & Millau" with 16.5 points, which corresponds to three hoods. The hood chef Alexander Stöhr emphasizes that "consequence and discipline" are the most important ingredients for this sustainable success. The quality, both the products used and the preparation, must remain at a high level at any time.
An essential element of success is the small but fine team: only five employees ensure that the culinary wishes of the guests are fulfilled. "Without the overall performance of the team, this would not be possible in the form," says Stöhr. The family gangs in the restaurant are particularly valuable: While Stöhr cooks himself, his wife Karin takes over the kitchen discipline and son Niko takes care of the service. Nevertheless, the boss sees the need to find good staff in a steadily growing market, which turns out to be a big challenge.
a loyal customer base
Despite the increasing cost of living and the general economic uncertainties, the restaurant remains true to its regular guests. "We realize that people go out more selectively. If it doesn't cost what it wants, there is no longer," explains Stöhr. Nevertheless, the restaurant has a loyal fan base from the region that prefers to celebrate special occasions in Farrach Castle. Stöhr enjoys being able to accompany the guests at such special moments of their lives.
When the Stöhr team goes out to eat, you usually visit selected restaurants. "Eating is as important to me as cooking," says Stöhr. He appreciates to be hosted as a guest every now and then and in return to collect inspiration for his own kitchen. "If you don't do that, you will be blind. It's like a kind of further training."
wine expert in the team
Niko Stöhr has also trained as a wine academic together with his professional career in recent years. This highly respected training provides comprehensive knowledge of wine and spirits and is not very widespread. The awarding of the diplomas took place in Esterházy Castle in Eisenstadt, which confirms the pride of the young sommelier.
With this further training, Niko not only brings Niko to the restaurant, but also offers the guests special experiences when choosing the wines. The combination of high -quality cuisine and exquisite wines is a trademark of Castle Farrach, which still stands for top -class culinary delights even after more than 25 years.
