Leberkäs: The popular pleasure phenomenon and its secrets!
Love for liver cheese is unbroken, and this becomes clear in the upcoming episode of "DOK 1: The Leberkäs - world -famous in Austria". Hanno Settele embarks on a culinary journey through Austria and Bavaria to explore the history and popularity of these traditional food. The program will be broadcast on ORF 1 and ORF ON on April 30, 2025 at 8:15 p.m. [OTS] (https://www.ots.at/presseaus-sung/ots_2025049/dok-1-der-leberkaes-weltberuehmt-in-oesterreich-Hanno-Settele -am-April-in-1-und- on-on- on-Mission-Leberkaes) reported.
Leberkäs, a food with over two and a half centuries of tradition, is considered the most popular break and snack in Austria despite its unhealthy and greasy reputation. It even exceeds popular fast food options such as pizza, burgers and kebabs. In the show, Settele will meet with Leberkas-Pepi and Margarete Gumprecht from the last Austrian horse network, among others, in order to shed light on the various variants of the liver cheese, including special preparations such as horse, pork and white sausage lifting.
from cooking to music
In an exciting culinary challenge, star chef Alexander Herrmann and Settele create a Leberkäs-G’röstl. Max Stiegl will also show his skills and demonstrate how to prepare liver cheese in the glass. Actor Robert Stadlober will discuss the continued popularity of the liver cheese, while historian Peter Peter examines the origins and spread of these foods in Munich. The musical accompaniment of the show is unique: The duo meat & meat has composed a liver cheese song in Vorarlberg dialect, and Settele will ask musicians: inside for their interpretations in various music styles.
An interesting aspect of the show is the presence of Nadina Ruedl, which presents a vegan variant of the Leberkäs in Vienna. In view of the current health discussion, the question is also raised whether the liver cheese is still up to date as an unhealthy meat snack.
a deeply rooted culinary tradition
The roots of Austrian cuisine are diverse and go back to the cultural influences, which were found in Vienna through trade relationships and historical events. Wikimeat illustrates that Vienna, once a Roman legion camp, later became an important center for different ethnic groups that brought their culinary traditions into the city. Over the course of the centuries, Austrian cuisine developed through influences from Hungary, Bohemia and the Habsburg Empire, which created a rich and varied cooking repertoire.
Leberkäs is an example of this culinary diversity, which was shaped by historical influences. To this day, this remains an integral part of Austrian eating culture, while gastronomy is also confronted with new trends and health aspects. This raises the question of how traditional dishes can be integrated into modern kitchen and whether they can defy their unhealthy reputation.
The program on April 30th not only offers an insight into the world of liver cheese, but also into the deep roots and change of Austrian cuisine as a whole.
