Meatless trend in the Alpine region: vegetarian huts conquer the mountains!
The gastronomy in the Alpine regions shows a clear trend: more and more mountain huts and ski huts are relying on meatless and even vegan cuisine. In its over 230 huts, the Alpine Club deliberately focused on vegetarian and vegan offers to reduce the high CO2 footprint of meat food. According to Georg Unterberger, the head of the Hütten and Ways department at the Alpine Club, this decision is supported by the climate strategy of the association, which means that meatless food is not only trendy, but also increasingly focuses on. This can also be seen in many classic ski huts that adapt their menus to address a wider guest layer, as the Alpine Club website reports.
An example of this development is the Mittekopf hut (1934 m) in the Lechtal Alps, which is a popular destination for hikers and climbers. Here guests not only enjoy an impressive view, but also a rich breakfast buffet with freshly baked bread, which is prepared with love. The preparation of the sourdough bread requires time and dedication: the inserting property is mixed with rye flour and tempered water and can be mature overnight. Such traditional and carefully prepared dishes underline the offer that uses the growing demand for meatless and regional dishes, and offer guests a piece of regional identity in the middle of breathtaking nature.
new culinary trends in the mountains
The decision for vegetarian or vegan food is not only made for ecological reasons, but also as an economic strategy. Alois Rainer, restaurateur and tourist division chairman, emphasizes that in groups, especially in groups, the vegetarians or vegan options are often the decisive factor where you stop. As a result, gastronomy businesses are increasingly focusing on vegetable options in order to reach a wider audience. Manfred Kleiner, head of the Wedelhütte in the Hochzillertal ski area, sees a logical development in vegan cuisine that reacts to today's needs.
