"We support the farmers by buying their products at fair prices. Instead of throwing them away, we make A products of it, which we then use in our hotel," explains Peter. This not only promotes sustainability, but also the local economy.
The Wingst itself offers an ideal environment for promoting sustainable development. Surrounded by one of the largest forest areas of northern Germany, Claus Peter sees the opportunity to pursue innovative concepts in accordance with nature. "We bind 28 tons of CO2 for over 50 years, which is transparent and tangible for our guests," he explains proudly.
The award as the "Green Innovator of the Year" is the result of an intensive selection process. Nominations are checked by a committee of experts and Germany's largest tax consultancy. Claus Peters committed approaches were considered exemplary by the jurors because they benefit to the region and its people to a large extent.
"We always had to be inventive", Peter notes with a smile on the challenges that leads a hotel in a less frequented region. "A Michelin star alone is not enough.
