The world's largest competition for Pâtissiers
No, not the World Cup-it is the World Pastry Cup. This Biennale event attracts participants from countries such as Egypt, Mauritius and South Korea, who present the best dessert creations in a sweet competition. This year's competition took place on January 20 and 21.
The challenge of the Pâtissiers
Each team consisted of three members - each specialists for chocolate, ice cream and sugar. Her task was to create three desserts that represent their country: a frozen dessert, a restaurant dessert (which can be provided with special sets at the jury table) and a chocolate show work. And the whole thing had to be completed in just five hours.
The Pâtissiers relied on ingredients and the design to present the culinary delights of their countries. The Chinese team created an elaborate kite made of sugar while the competitors from Mexico integrated chocolate, corn and other domestic foods into their desserts.

In addition to the culinary presentation, the participants carried thematically suitable outfits and accessories. The French team presented itself in elegant Breton striped shirts and baskets, while the chefs made of Mexico masks, inspired by the sugar skulls of the Día de los Muertos. The team from Great Britain exposed its creations in snappy newspaper young hats and fly.
The winning team
Despite the issue of the 2025 event in Lyon, the French team was unable to win the gold medal and took second place. The victory went to the recurring champions from Japan, who presented a citrus fruity, chocolate sorbet in the form of an Asanoha (hemp leaf) as a restaurant dessert. Her frozen dessert was an apricot creation that resembled a roundabout.
"We have packed history and culture in Japan in the design. We managed to integrate taste and fine traditional patterns to show our techniques," said the team's chocolate specialist, Masanori Hata.
The results of the competition
"I no longer remember the moment when we won. I was so surprised and couldn't believe it. Japan was now awarded two tournaments in a row. I am happy and proud," added Hata.
In the meantime, the French team presented a spectacular series of chocolate eggs filled with a chocolate hazelnut soufflé and garnished with chocolate sprinkles, immersed in citrus vanilla-infected clarified butter and served with grilled vanilla ice cream and a clementinine jam.
The bronze medal went to Malaysia, the best result of the Southeast Asian country in this competition. The Malaysian team received high reviews for their frozen dessert, which she describes as "a harmonious mix of radiant citrus fruits, sweet apricots and subtle spices", which represents a tribute to the country's multicultural heritage.
