In Hanover, a new, extraordinary creation from the traditional factory by Truffel Güse was presented with the "Duubai Schocolade". This innovative chocolate requires a total of seven steps and takes four days to complete completion. "The product is very sensitive," says Sabine Güse (59), who designed the sweet delicacy with a lot of dedication.

The history of this special chocolate began in a very private setting: Her 16-year-old daughter Ella asked whether Sabine Güse could produce the well-known "Dubai Schocolade". In view of the 103-year-old family tradition in the chocolate business, which has been provided with the motto "Chocolatier since 1921", the manufactory decided to put the project into practice. Production finally started on October 8th.

"It was a real challenge," admits Güse-Henschel with a smile. The crunch, which comes from the Turkish Kadayıf - also known as angel hair - is one of the central ingredients. Another crucial component was the pistachio cream, with the selection of which Güse-Henschel had a lot of trouble. "I've been doing chocolate for 37 years," she explains, "but the search for the perfect ingredient has never been so difficult." The high quality standards are undisputed in truffle güse: no artificial flavors, palm oil or soyafett are used.

In the meantime, the creative boss had already designed an appealing graphic for the packaging that shows the iconic skyline dubais. To develop the right recipes, she worked tirelessly and adapted the fillings on the day of the first production.

A total of three different varieties tested it with her daughters, with the final version being uniquely combined. "The taste was great, but the crunch was missing," she explained to one of her attempts. In particular, she points out that there is already a waiting list, although the first 42 chocolate boards have just been offered. A tax price of 19.95 euros for a handmade variant is quite justified, consider the exploding price for cocoa, which has increased by 80 percent in recent years.

The taste experiences of the new chocolate

The production process of the "Duubai Chocolate" is as fascinating as it is demanding. The raw material Kadayıf needs a very precise roasting because it can burn quickly when heated. The chocolate production in Güse’s manufactory requires a lot of skill: confectioner Lena Wittmershaus ensures that the fillings in the hollow bodies are evenly distributed, while the chocolate has to be constantly cooled.

The inspiration behind the name "Duubai Schocolade" is another puzzle that explains the Güse-Henschel with a conspiratorial wink: "Because we are the guuten". This statement is underpinned not only by the numerous awards of the company, but also through the preparations that it meets for the international world of chocolate championship. Because one of their varieties has already celebrated glossy success with "Simply the Best" (50 grams for 4.40 euros) at a European championship.

Has all the effort paid off? A radiant smile on the entrepreneur's face reveals: "I do it out of love for my daughters". It is clear that the enthusiasm and the commitment that have been incorporated into the production of the "Duubai chocolate" will bring fruitful results not only for their family, but also for the many chocolate lovers in Hanover.
